 L’azienda Matrix nasce dal costante impegno di Giovanni Donnini nel realizzare un laboratorio dove sviluppare la valorizzazione dell’olio extravergine di oliva biologico, riponendo la massima cura ed attenzione ai processi di produzione, nel rispetto della tradizione dell’olivicoltura Toscana, avvalendosi delle migliori tecnologie.
 
Questo risultato viene assicurato ponendo grande cura alle attività di coltivazione, potatura e concimazione delle olivete, nonché dai tempestivi tempi di raccolta e di frangitura contenuti nella stessa giornata, determinanti al fine di ottenere un prodotto di eccellenza. L’imbottigliamento sotto atmosfera inerte al fine di conservare la freschezza e la fragranza dell’olio appena franto.

Matrix was born From GIovanni Donnini’s relentless commitment to create a workshop to enhance organic extra virgin olive oil, placing the utmost care and attention to the production process, respecting the tradition of Tuscan olive growing , using the best technologies. this result is ensured by payng great great attention to to the cultivaltion , pruning and fertilization of the olive groves, as well as by the timely harvesting and pressing of the olives within the same day, decisive in order to obtain a product of excellence. Bottling is done in an inert atmosphere to preserve the freshness and fragrance of the freshly pressed oil.

ESSENTIA GOCCE D'ORO

The Extra Virgin Olive Oil ESSENTIA GOCCE D’ORO, IGP “Colline di Firenze” comes from the varieties of frantoio, moraiolo and leccino olives, typical of the Florentine countryside, coming exclusively from the best olive groves which have been present for centuries in the territory of Fiesole. A splendid blend, a synthesis of tradition and territory, an excellent result that bears witness to the passion with which Giovanni Donnini has been committed to its enhancement for years. The olives of Leccino, Moraiolo and Frantoio varieties, all exclusively cultivated and harvested by hand in the Farm owned in Fiesole, are crushed on the same day of their collection at the Pruneti Oil Mill, that’s innovative and futuristic in crushing and bottling techniques, in order to limit the oxidation of the oil. The immediately filtered oil is then bottled in bottles of 0.25 and 0.50 cl thus ensuring a use with the maximum fragrance as needed.

The Extra Virgin Olive Oil ESSENTIA GOCCE D’ORO COLLEZIONE comes from the Frantoio and Moraiolo varieties of olives, typical of the Florentine countryside, coming exclusively from the best olive groves which have been present for centuries in the territory of Fiesole.
